This is the perfect dish for a family dinner or a gathering with friends, this easy-to-make chicken and pasta vegetable bake is sure to satisfy everyone at the table!
What you'll need:
1 pinch salt
500g 1 bag pasta (penne)
1 drop vegetable oil
1 ½ oz of butter
1 ½ oz of plain flour
1 ½ pint semi skimmed milk
1 ½ tsp mustard
3 oz cheddar cheese
1 chicken or veg stock cube dissolved in a little hot water
3 breasts of chicken chopped into dice
1 head broccoli (cut into small florets)
1 courgette
1 pepper
6 oz bread crumbs
2 oz grated cheese
4 tomatoes, sliced
Method:
Melt the butter in a heavy based saucepan
Add flour, stir well and cook on a gentle heat for about 2 minutes to cook out the flour
Remove from the heat and slowly add milk using a whisk
Bring back to the boil over a medium heat
Add cheese and mustard and stock, season well
Chop broccoli into florets and add to a pot of boiling water, cook for about 6 minutes
Chop chicken and vegetables into dice and fry in oil in a pan until soft, about 10 minutes
Cook pasta according to pack and drain
Add pasta to oven dish
Put chicken and vegetables on top of these
Cover with cheese sauce
Sprinkle breadcrumbs and grated cheese over and decorate with tomatoes
Bake for 25-30 minutes at 180oC gas mark 6
