This Mexican beef and vegetable recipe is packed with fresh ingredients and a great way to get the family to eat more vegetables.
For the Mexican Beef sauce you will need:
1 kg steak (5% fat) mince
1 large onion
1 red pepper
1 green pepper
1 yellow pepper
1 punnet of mushrooms
1 tin of kidney or mixed beans
2 cloves of garlic(crushed)
1 tsp mild chilli powder
1tsp cumin
1tsp paprika
2 tbs of tomato puree
1 large carton of passata or 2 tins of chopped tomatoes
½ pint of beef stock cube made with 1 beef stock cube. olive oil for frying
8 wholemeal tortillas
6oz grated cheddar cheese
Instructions for the Mexican Beef sauce:
Chop onion and fry gently in a medium saucepan
Wash and chop peppers and mushrooms add to saucepan and add garlic, chilli, cumin and paprika. Fry with lid on for 5 mins until vegetables are soft.
Put mince in a frying pan until brown for about 15 minutes on a high heat.
Add tomato puree to pot of veg and add tinned tomatoes or passata.
Add ½ tsp of sugar to take away bitter taste of tomatoes.
Make up the beef stock cube and add to pot
Add the browned mince to the sauce bring to the boil and simmer for about 20 minutes.
Meanwhile while sauce is cooking prepare the fillings:
Guacamole
You will need:
2 avocados - peeled, stones removed and chopped
1 small red onion, finely chopped
1 clove garlic, minced
1 ripe tomato, chopped
1 lime/lemon juiced
salt and freshly ground black pepper to taste
Method:
Mash avocados in a medium serving bowl.
Stir in onion, garlic, tomato and lime juice.
Season with salt and pepper to taste.
Sour Cream Dip
You will need:
150g low fat Greek/plain yogurt
2 tbsp of low fat mayonnaise
1 tsp lemon juice
1 crushed clove of garlic
Method:
Mix all ingredients together
Homemade Salsa
You will need:
1 can good quality chopped tomatoes
1 red onion
2 cloves garlic
2 tbsp fresh coriander
Salt and pepper
Fresh chilli chopped (optional)
Method:
Chop onion finely
Crush or chop garlic
Chop coriander
Add tomatoes and mix all ingredients.
Season with salt and pepper.
Tortillas
Wrap tortillas in tinfoil and put into oven for 15 minutes at 150.oc gas mark 3.
When heated, place an individual tortilla on a plate, spread with sour cream, top with mince, cheese, salsa, and sour cream. Add grated cheese and roll up and enjoy.
Shredded iceberg lettuce and sliced red onion are delicious with this too.
